Wickedly Amazing Roasted Cherry Tomato Sauce
This is one of my favorite recipes … I learnt it when my gardening obsession started we ended up with about a million cherry tomatoes ripe at the same time !
These tomatoes when done are absolutely amazing you will wonder why anyone buys sauce !?
they can be used as a topping for bread, goat cheese, pasta, crackers before they are blended for sauce
Cherry Tomato Sauce
1 pound cherry tomatoes
1/2 cup olive oil
3 cloves garlic chopped (I use 6 cloves)
2 tbs of balsamic vinegar
2 tsp brown sugar
1 tsp rock salt
handful of fresh basil leaves
splash of red wine (optional)
set oven at 350
mix all ingredients together so tomatoes are coated
pop in oven
and leave for about 1 hours (depending on oven) stirring occasionally
Bake until tomatoes are softened and caramelized
serve as is
blend in food processor for a smooth sauce consistency
