BBQ Butterflied Chicken With Potato Wedges
My bbq is working over time at the moment as the heat wave in spain has altered the amount of time I spend in the house … mental note * get air-con next year !
This chicken and wedges a one pan dish and not only is it super easy its delicious, all you need is a bbq and some time to hang around while it cooks.
1 chicken butterflied (cut backbone with kitchen scissors)
1/2 cup olive oil or coconut
1 tsp paprika
4 large potatoes cut into wedges
Whisk together the oil, paprika, garlic, thyme, lemon zest and onion in a bowl.
Place chicken in a large baking dish and coat in the oil marinade.
Cover and let marinate in the refrigerator for 2 hours.
Pre heat bbq to med/high
Place your potatoes around the chicken and add some salt.
Cover the pan with tin foil and place on heated bbq.
leave for approx 40 min. (bbq time will vary)
Remove the chicken and place directly on the grill skin down and until skin gets crisp.
remove potatoes and serve with fresh lemon wedges
