I fell in love with bircher muesli the first time I tried it and from then I was determined to experiment and create the perfect recipe of my own. It has taken some time to create this recipe but i have finally got something i am totally happy with and am excited to share!!!

Mornings can be a hectic time of day and with the stress of getting ready and having a list of things that had to be done an hour ago we can miss out on the most important meal of the day… breakfast.

Breakfast is the meal that breaks the fast we have been on throughout the night, our bodies need to be fuelled with nutritious food  to keep us going and performing at our best.

So the bottom line is breakfast is something important and shouldn’t be missed.

I love switching my breakfast ideas up and having something different every few days as I get bored so easily and change is always good.

I have never found any type of breakfast quite as unique as this bircher muesli, bircher muesli is basically a cold porridge that consists of oats, milk, nuts and seeds and sometimes dried fruits such as raisins and cranberries.

This muesli is to be made in advance or overnight as it cannot be eaten straight after making it, the oats have to absorb all of the milk for this muesli to be successful. If this is my breakfast of choice for the week i will make it on a Sunday night and store it in a container and enjoy eating it throughout the week.

Bircher Muesli

Serves: 4-6 serves depending on size preference

Recipe Ingredients

  • 2 red apples
  • 2 tablespoons of lemon juice
  • 1 teaspoon of ground cinnamon
  • 1/2 cup of raw unsalted almonds
  • 2 cups of rolled oats
  • 1/2 cup of raisins
  • 2 tablespoons of linseed
  • 1 tablespoon of sunflower seeds
  • 1 tablespoon of pumpkin seeds
  • 4 cups of unsweetened almond milk or any other plant based milk

Recipe Instructions

  1. Core the apples and grate them into a large bowl.
  2. Add in the lemon and cinnamon and mix together.
  3. Crush the almonds into small chunks in a mortar and pestle or a food processor. Then add them into the bowl along with the remaining ingredients.
  4. Mix all of the ingredients together until combined.
  5. Put the mixture into a container and store in the fridge overnight for the morning.
  6. Serve with fresh fruit and some nut butter if desired - eat and enjoy.

Recipe Notes

  1. This bircher muesli will last in the fridge for up to one week.
