Cauliflower And Chickpea Mash With Crispy Onions

Well this was amazing !

I happened to have a cauliflower that was sitting around looking a bit sad and I was craving mashed potatoes, …. so I figured lets see if it will compete….. it totally did !

I am clearly loving the idea of autumn (although its still really hot here in Spain) and my Canadian roots flare up in September for  comfort foods, my slow cooker has taken up residence on its rightful counter spot !

Ingredients 

1 head cauliflower chopped into pieces

2 garlic cloves peeled and left whole

2 garlic cloves peeled and chopped

1 can chickpeas drained and rinsed

2 onions chopped into small pieces

1 tbs oil

1 tbs butter

1/2 cup cream * can substitute with greek yogurt or almond milk

salt

pepper

1/2 tsp turmeric

1 tbs paprika

Directions

Bring a large pot of salted water to a boil. Add the cauliflower and 2 cloves of garlic cook until the cauliflower is tender, about 15 minutes.

Drain well.

Return the cauliflower to the pot with the chickpeas and cook over low heat for about 2 min. Stirring as you are cooking to evaporate some of the excess moisture from the chickpeas and cauliflower.

Meanwhile in a skillet heat your olive oil and butter on medium high and add the onions and chopped garlic, cooking until tender and translucent.

Add half of the onion mixture to the cauliflower and chick pea and place all in a food processor blending on high adding the cream and spices as you go .

keep the onions and garlic cooking until nice a browned serving on top of the cauliflower and chickpea mash.
