Chicken With Goat Cheese Sundried Tomatoes And Spinach

Sooo I am super proud of this recipe! Why, you may ask? Because this is probably the 7th time I’ve ever cooked chicken in my life. My chicken usually turns out flavorless and dry, but this dish is the exact opposite! Flavorful and juicy, you will love this chicken dish.

Ingredients:

For Chicken

  • 2-8oz chicken breasts, fat trimmed
  • Freshly ground black pepper, to taste
  • Lemon zest sea salt, to taste
  • Dried rosemary, to taste (I purchase lemon zest rosemary sea salt which is amazing!)
  • Coconut oil spray
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp apple cider vinegar

For Sauce

  • 1/4 cup sun dried tomatoes, dried (not the ones packed in oil)
  • 1/3 cup apple cider vinegar
  • 3 Tbsp lemon juice
  • Freshly ground black pepper, to taste
  • 2 Tbsp olive oil
  • 4 cups fresh spinach
  • 2oz organic goat cheese

Instructions

  1. Season both sides of chicken breast with lemon zest sea salt, freshly ground black pepper and dried rosemary. Season to taste… I like to add a generous amount of seasoning to keep chicken flavorful.
  2. Heat large sauté pan over medium-high heat. Spray pan with coconut oil. Once oil is hot, place chicken in pan and cook for 2-3 minutes until golden brown. Turn chicken over and cook other side for 2-3 minutes until golden brown. Once both side are golden brown, add 2 apple cider vinegar and lemon juice to pan. Reduce heat to medium-low and cover pan with lid. Continue cooking chicken, scraping pan as you go to keep the vinegar/lemon sauce from sticking to pan. The chicken will take an additional 10-20 minutes depending on thickness.
  3. When chicken is almost done cooking (needing ~5 more minutes), heat a small sauce pan over medium-high heat. Add 1 Tbsp olive oil and sun dried tomatoes. Season tomatoes with pepper and cook for 3 minutes until tomatoes are soft. Add vinegar and lemon juice to pan and simmer until liquid is reduced  by half. Add remaining 1 Tbsp olive oil to pan and taste sauce. Add additional salt and pepper if desired.
  4. When chicken is completely cooked through, remove pan from heat. Pour lemon sauce over the chicken. Add the fresh spinach and goat cheese to the pan. Scrape bottom of pan and combine sauce with brown bits. Stir the ingredients until spinach is wilted and goat cheese is melted, forming a slightly creamy looking sauce. Taste and add additional olive oil if needed. I like my recipes on the more acidic side, so if you don’t- add olive oil to tame the acidity!
  5. Plate chicken and spinach mixture and top with additional goat cheese and sun dried tomatoes.
