I know I know I make so many soups its annoying ! but they are so easy and so GOOD !

If you like curries and you like soup this little number is for you !

I make this Curried Sweet Potato And Cauliflower Soup in a slow cooker and just zap it at the end with my hand held blender, although my husband likes it unblended .(he also puts it between 2 pieces of bread so his culinary opinion is shaky)

This soup can also be made into a curry , just add a can of chick peas and don’t blend at the end ( make sure you cut everything into bite size pieces) and add the cauliflower half way through x

As for the Indian spices I cant tell you how important and beneficial they are to your health and with spring around the corner you need to get that immune system up.

Q– Why do so many people get cold viruses in spring?

A- This is basically the same reason flu season occurs in the winter. … Not only can pollen spark miserable seasonal symptoms, but also allergies leave individuals more likely to catch a cold virus because their immune system is already under attack.

So get soup and spices into you now and ward off the viruses 😍

Ingredients 

1 small head cauliflower, chopped into florets, stalks included
2 medium sweet potatoes, peeled and chopped into chunks

1 cup veggie stock
2 tbsp  coconut oil
1 tbsp turmeric powder
2 tbsp curry powder
2 medium onions, chopped
2-4  garlic cloves, chopped
1 -2 tsp of minced ginger
1 can full fat coconut milk

Salt to taste

Directions 

Place cauliflower, sweet potatoes and  veggie stock in a slow cooker mix together

Heat 2 tablespoon of oil in a skillet and Sauté onions for 3 minutes and then add all spices minced garlic and ginger

sauté for 1-2 more minutes mixing well

add the onions and spices to the slow cooker and mix all together

leave on low for around 6 hours or high for 4 hours (depending on your slow cooker)

when sweet potatoes are soft enough to slide a fork into add the coconut milk and blend everything together (I use a hand blender)

serve with a dollop of  thick greek yogurt and chopped fresh chillies X

* If you dont have a slow cooker check out this site for conversions so you can use your oven !
