Delicious Zucchini-Banana Bread

This is such a staple in the house when i realize I have once again planted to many zucchinis (every year) ! Zucchini is such a great veggie as it has a very subtle taste so can easily be used in breads sweet or savory. This zucchini-banana bread is a simple delicious recipe that will be used again and again, I substitute the walnuts for dark chocolate chips . I have tried and tested this and love it ! the only alterations i make is chocolate chips in place of nuts and i add an extra banana.Enjoy Jennifer Rice  

As for growing these babies zucchini are super easy and plentiful , although you may want to grow them on a trelise as they spread like crazy!

  1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8×4 inch bread loaf pans.
  2. In a large bowl, beat eggs until light yellow and frothy. Add oil, brown sugar, white sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon, baking powder, baking soda, and salt. Mix in the cranberries and nuts. Divide the batter evenly between the two prepared loaf pans.
  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes. Allow to cool in the loaf pans on a wire rack before removing and serving.
