To Die For Prawn Ceviche With Coconut Milk
I absolutely love love love this dish ! my husband introduced me to raw fish salad years ago and using prawns seemed the right thing to do (although these are slightly cooked) .
I am completely spoilt for seafood now that I live in spain so I am always trying new recipes and this little baby is to die for 😘
1 pound prawns peeled and deveined
2 Tbsp himalayan salt
3/4 cup fresh lime juice
3/4 cup fresh lemon juice
1 finely chopped red onion
1 fresh chilli minced
1 cup chopped fresh cilantro
1/2 can coconut milk
bring a large pot of water to a boil add 2 Tbsp of salt.
Add the prawns and cook for 1 – 2 minute only
Remove prawns and place immediately into a bowl of ice water to stop cooking
Drain the prawns
Place the prawns in a non-metallic bowl and mix in the lime and lemon juice
Cover and refrigerate for a half hour.
Mix in the chopped red onion and chilli and coconut milk
Refrigerate for another half hour
serve with cilantro,avocado.and cucumber on the side
