Grilled Balsamic Asparagus Salad
Grilled asparagus is my spirit vegetable , the taste is unbelievable compared to the old days of steamed asparagus.
It is literally so hot in Spain that the idea of cooking anything that takes longer then 10min is a no go !
This salad is a great lunch or dinner as the grilled asparagus makes it feel more like a meal then just a plain salad and its perfect for meatless Mondays !
1 bunch of asparagus trimmed and washed
1 cup chopped iceberg lettuce
1 cup arugula (rocket)
1 large tomato chopped bite size
1/2 cup crumbled feta cheese
1 small Spanish onion chopped
3/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
Pinch of Salt
1/2 tsp mustard
1/2 tbs runny honey
In a large bowl mix together all salad ingredients gently and set aside.
Preheat grill to high heat.
while oven is heating
Mix together all salad dressing ingredients in a sealable container and shake until well mixed.
Lightly coat the asparagus spears with olive oil.
Season with salt and pepper to taste
Grill over high heat for 2 to 3 minutes.
pour dressing over salad and toss
Add asparagus and serve
