Low And Slow Pulled Balsamic And Cherry Tomato Chicken
Cooking low and slow is my favorite method of cooking I love the smell that goes through the house and the taste always seems so much richer me.
This chicken is easy and super tasty and a great left over meal, it can easily be done in the slow cooker.
You can serve this how it is and its perfect for the pales out there or you can put it on a crusty bum add some shredded cheese and melt into happiness!
1kg chicken thigh fillets
1 large onion diced
3 garlic cloves minced
1 tbs olive oil
2o cherry tomatoes cut in half
1 8 oz jar of tomato sauce (homemade sauce if you have time)
3/4 cup balsamic vinegar
pinch salt and pepper
1 tsp brown sugar
Preheat oven to 325
Place chicken into a large baking pan
In a large skillet, sauté onion and garlic in olive oil over medium heat until tender about 6 to 7 minutes, add tomato sauce, brown sugar,balsamic,salt and pepper and mix together for 2 min.
Pour over tomato mixture and toss to coat the chicken adding cherry tomatoes
Cover and bake for 2 hour or until chicken is very tender take cover off and cook for another 30 min
Using 2 forks shred chicken Stir shredded chicken through tomato sauce.
