Poached Cod With Garlic Rice And Black Garlic Yogurt

Poached Cod With Garlic Rice And Black Garlic Yogurt 
I whipped this meal up tonight when trying out my black garlic supply , and wow what an amazing meal.
Black garlic is my newest obsession and on the up side it’s loaded with twice as many antioxidants as raw garlic.
I don’t eat as much fish as I should , sadly finding wild fish is becoming more and more of a problem these days.
So when I ran into these wild fresh cod filets I jumped on them rushed home and started prepping.
I love poaching cod (white fish) in coconut milk but you can totally use whole milk depending on your preference.
You can also substitute the garlic rice for cauliflower rice  also.
Garlic Rice
2 Cups of Jasmin rice
4 cloves garlic cut in half
pinch of salt
place all ingredients in a rice cooker
add 2 cups water
Black Garlic Sauce 
4 cloves black garlic peeled
1 cup greek yogurt
pinch of salt
squeeze of Lemon
4 tbsp coriander
1 red chilli pepper finely chopped
In a blender blitz together the herbs, garlic, yogurt and chilli
Poached Cod 
2 cod fillets
500ml of coconut milk
1 pinch of salt
Pour the coconut milk into a wide-bottomed pan and season with the salt
Place over a low heat and warm the milk to a soft simmer
Place the cod in the milk and cook for 5–8 minutes
Remove the fish from the milk
Serve cod on rice topped with the black garlic sauce.
