Simply Amazing Slow Cooker Poached Chicken

When you  poach a whole chicken in a slow cooker you get amazingly moist chicken that also comes with extremely useful stock !

  This is such a great slow cooker chicken recipe

the result is an amazingly tender chicken that can be used for so many different recipes

when i’m done cooking the chicken and it has cooled i shred it and place it in glass container for the next few days of quick meals

enchiladas

chicken salads

vietnamese rolls

soups

and the list goes on

 Simply Amazing Slow Cooker Poached Chicken

Ingredients 

1 whole chicken
2 celery stalks broken into pieces

carrots chopped into large pieces

onion cut into large pieces

1 bulb of garlic peeled and cloves chopped in half

tbsp coarse salt

Directions 

place half of the veggies on the bottom of slow cooker

Then place chicken on top breast up

add rest of veggies on top and salt.

Then add the water (add extra if chicken is not covered

 Cook on high for 3 hours

(or on low for 5 hours)

or until the chicken reaches 165 degrees.

take chicken out and allow to cool before chopping or shredding

Chicken Broth 

Throw all the bones back in the slow cooker with the stock adding some more veggies if on hand and more water if needed and cook on low overnight .
