  Super Easy Baby Spinach And Pea Soup
This spinach and pea soup is great served warm or chilled and is absolutely packed with goodness, if you are trying to get more veggies in your diet or just looking to switch it up a bit then this meal is for you.
INGREDIENTS

1 bag of fresh baby spinach

1 bag of frozen peas

3 cloves of minced garlic 

1 Tbs olive oil

2 cups of vegetable or chicken stock

½ lemon

Coarse salt and freshly ground pepper

INSTRUCTIONS

In a large skillet or pot , sauté spinach in olive oil for 1 min until slightly wilted.

Add the minced garlic to the  spinach and sauté until spinach is completely wilted.

Add the veggie stock and frozen peas to your pot.

Bring to a boil and then simmer for 10 minutes.

 With a hand blender, puree soup adding lemon as you go.
