Super Easy And Super Tasty Greek Style Chicken Skewers


  I love Greek food and I love tapas and I love super easy 😉 so this is an amazing recipe for me as I get to use my fav dips and eat with my hands 😊  We made these Greek skewers the other night with lemon roasted veggies and an amazing beetroot hummus .

Marinating makes the world of difference when cooking chicken so try and get at least 1 hour but if you can 3 hours of marinating  it will make the chicken super tender and juicy.

2 boneless chicken breasts

2 lemons juiced

1 tsp lemon rind

4 cloves minced garlic

1 tbls dried oregano

¼ cup olive oil

1 tsp mediterranean salt

½ tsp freshly ground pepper


Slice the chicken breasts lengthwise into thirds

and then cut into 1-inch chunks.

Place chicken cut chicken in a bowl adding all ingredients and mixing well with hands (gloves are best)

cover and let marinade for at least 3 hours in the fridge

place on skewers

Grill chicken on bbq or in oiven

turning often so each side browns and has light grill marks, about 10-15 minutes or until chicken juices run clear.

Serve with tzatziki or hummus   or better yet both !




*squeeze a bit of lemon on the skewers while cooking

*prepare wooden skewers by soaking them in water for 10 minutes

*Do not marinate in a metal container as the acidic mixture can react with the metal. Use a sealable plastic or glass container and cover with plastic food wrap.

Piercing the chicken with a fork, or cutting it into smaller pieces will help it absorb marinade. In general, two hours of marinating is long enough for the meat to soak up the flavor, but poultry can marinate for up to two days in the refrigerator, according to the USDA Food Safety and Inspection Service.
