What started out as roasted chickpeas turned into a full vegan dinner, super tasty and bursting with healing spices.
Even the hard core meat eaters will enjoy this tasty vegan meal
Roasted cauliflower is definitely one of my favorite veggies, it makes an appearance at least twice a week at our house. Now that I have incorporated chickpeas its all getting rather exciting ! (I clearly need a life ) ….
1 cup chopped mushrooms
preheat oven to 400
In a bowl toss together all of the spices, oil, salt, pepper, lime,cauliflower and chickpeas.
Spread the cauliflower and chickpeas evenly in a baking dish.
Don’t pack them to closely together as you want them roasted not steamed.
Bake for 40 minutes and stir half way through.
While you are baking the roasted cauliflower and chickpeas, place the mushrooms and onions in a skillet with a tbs of oil and cook on medium high for about 10-15 min until nice and brown.
Mix everything together
And try serving roasted cauliflower and chip dish with Serve with this yogurt basil dip
