Vegan Spinach And Chickpea Coconut Curry

What a beautiful dinner !

I love my slow cooker for curries, the prep takes about 15 min and thats it just pop it in and leave it for the day ! This is on of those recipes that  gets better the next day,

Ingredients

3 medium sweet potatoes diced

3 small potatoes diced

1 can chickpeas drained

1 large onion diced

2 cups chopped spinach

1/2 cup veggie stock

1 can coconut milk

1 tbs ghee

2 tsp turmeric

1 – 2 tsp cumin

1 tsp gara masala

pinch of cayenne pepper (optional)

Directions

  1. Place the sweet potatoes, potatoes, chickpeas and veggie stock into the slow cooker
  2. In a heated skillet add the ghee, onion, and garlic cook on medium/high for 3 minutes
  3. Add all the spices and cook for a few more minis until mixed together (2 min)
  4. Mix onions garlic and spices into crock pot
  5. cook on low for 3 hours or until potatoes are tender
  6. Add spinach and coconut milk mix well and cook for another 20 min
  7. Serve with fresh lemon wedges (and greek yogurt if not vegan)
