This Corn Avocado Goat Cheese Salad With Dill Lime Vinaigrette salad is a hit !
I very rarely use frozen veggies but I found some organic frozen corn the other day and thought I would give it a shot, so happy I did.
Super easy recipe and brilliant for a bbq or on its own as a meal.
Ingredients Dill Lime Vinaigrette
teaspoon grated lime zest (lemon is ok if no limes available)
1/4 cup fresh lemon juice
1/2 cup extra-virgin olive oil
3 teaspoons dill fresh if available
Whisk the lime zest, salt , dill and lemon juice
Add the oil in a stream until an emulsion forms
let sit for 5 min

3 cups cooked corn (fresh or frozen) * Always try and get organic corn.
1/2 cup crumbled goat cheese or soft goat cheese
1 large avocado cubed
Place all ingredients in large serving bowl and mix gently adding the dill lime vinaigrette
