Totally amazing and beautiful salad is completely full of color, flavors and so simple to make.

If you need a quick detox or restart from a big bad weekend this is your go to start over meal ! beets are an amazing detoxifier for your blood and liver.

The thing with beets is they tend to be ignored in the house as they can be super messy, they don’t have to be you can control  the beet mess I promise ! Follow the boiling instructions in directions and get your gloves ready.


3 cups of Rocket

2 boiled eggs

1 cup of crumbled feta cheese

1/2 onion chopped

2 large boiled beets


3 tablespoons of extra virgin olive oil

2 tablespoons white, cider or wine vinegar

pinch of salt

black pepper


This is the easiest and least messy way to boil beats

Before boiling your beets be sure to trim them leaving about 2 inches of stems at the top and root ends at the bottom

as this will prevents the red color from seeping out into the water.

Place in a pan covered with salted water to taste and 2 tsp of vinegar.

Boil until tender usually about 40 min

 Drain and run cold water over beets

Put some rubber gloves on and rub the beets and the skins will come right off.

Chop your beets into bite size pieces

Place your rocket, onion and beets in a 2 bowls and mix together top with crumbled feta, eggs and your dressing.
