So, I’ve been in a slump lately.  I haven’t been feeling funny or sassy enough to write about anything.  That’s life I guess, right?

Since Christmas I have been stuck in my house cleaning up bits of tape and wrapping paper that are seemingly everywhere.  I have been sitting in sweatpants eating Christmas candy and putting away the same new toys again and again.

There has been no cooking or baking or DIYing.  My life has been empty.

We even took the kids to the soulless place that is the Great Wolf Lodge.  For four days I was trapped in an oversized cabin with walking cartoon characters, buffet only meals, and thousands of screaming children.  Apparently we had lost our minds.

Now, of all the awful experiences that came out of that hellcation, there was one shining light in the darkness.  While trapped against my will, all I wanted was to sit in my own bed and watch movies while shoveling pizza into my face.

Finally I had a craving for something.  Now, with the tiny tot being gluten free, pizza was not on the menu for us at the lodge.  I would have to wait until I was at home.

My first phone call in the door was to my local pizza place.  Lucky for me they do make gluten free pizza.  Unlucky for me, their gluten free pizza really sucks.

It went immediately in the garbage.  And I went immediately to the store to buy all the necessities I needed for my own gluten free crust.

I finally got my pizza fix.  And now I am out of my slump and back in action.  Hopefully this gluten free pizza crust will bring you as much joy as it has brought me.

Best Gluten Free Pizza Crust Ever

Crunchy and fluffy gluten free pizza crust

Yields: 2 medium pizzas

Recipe Ingredients

  • 3 cups gluten free flour (I like King Arthur)
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 3 tablespoons sugar, divided
  • 1 tablespoon yeast
  • 1 1/4 cup warm water, divided
  • 1 tablespoon olive oil

Recipe Instructions

  1. Preheat oven to 350 degrees F
  2. In a small bowl, combine yeast and 3/4 cup warm water. Let set for 5 minutes to activate. Sprinkle in 1 Tbsp of the sugar a few minutes in.
  3. In a separate bowl, combine gluten free flour, salt, baking powder and remaining 2 Tbsp sugar. Whisk until well combined.
  4. Make a well in the dry mixture and add the yeast mixture. Add the olive oil and additional 1/2 cup warm water before stirring. Then stir it all together until well combined, using a wooden spoon
  5. Lightly coat a pizza stone with non-stick spray and place dough in the center. Using your hands and a little gluten free flour, work from the middle and push to spread the dough out to the edge. Get it to about 1/4 of an inch.
  6. Put the crust in the oven to pre-bake for roughly 25-30 minutes, or until it begins to look dry.
  7. Remove from oven and spread generously with your favorite pizza sauce, cheese and desired toppings. Pop back in oven for another 20-25 minutes, or until the crust edge looks golden brown and the toppings are warm and bubbly.
