This Is The Only Black Beans And Rice Recipe You Need!
This is really the perfect meal and its also a great addition to fajitas,burittos,tacos or just stick with black beans and rice !
If you don’t use black beans in your weekly meals I promise your missing out on these amazing protein packed beans, black beans are absolutely bursting with nutrients and are a great meal for meatless Mondays.
2 tbsp. olive oil
1 small onion, diced
1 small red or green pepper, diced
1-2 garlic cloves, chopped
1 tsp. cumin
2 tsp. paprika
1 cup basmati rice
3 tbsp. tomato sauce
1 can black beans, rinsed and drained
2 cups chicken stock or vegetable stock
In a medium saucepan, heat olive oil over medium high heat. Add onion, pepper and garlic, sauté for a few minutes.
Add the rice stirring until rice is completely coated in the oil. Season with cumin, paprika, and salt and pepper.
Add tomato sauce and cook for 2 minutes.
Add stock and black beans. Bring to a boil and reduce heat to low. Cover and simmer for 15 to 20 minutes. Remove from heat, keep covered, and let stand for at least 10 minutes.
Fluff it all together with a fork.

- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp cumin
- 1 chilli hot
- 1 cup of corn
- 1 can black beans
- 1 cup of rice
- 1 ripe soft lime
- 1 chopped medium onion
- pinch of salt
- 4 tbs olive oil
- 2 cups chicken stock
- 2 cloves fresh garlic chopped
- Put rice, onions, spices in a skillet and mix in olive oil to coat
- Turn stove on medium high when it starts cooking add some stock while stirring
- Continue adding stock when it almost absorbs all liquid add some more until rice is almost soft
- Add corn ,beans, chilli and garlic mixing thoroughly
- Squeeze lime juice all over mixture
- Turn stove of and cover for 15 min
- Serve with greek yogurt slivered garlic and coriander
