Cauliflower Buffalo Bites

I have been hearing about these cauliflower buffalo bites for a while now and decided to give them a shot. OMG they are seriously good ! I had my buffalo bites with a fresh herb dip and it was amazing but a blue cheese dip would be great also !

I have become a huge fan of cauliflower over the past few years, as soon as I realized it didn’t have too be boiled to death and could be roasted I was sold.

These can be made vegan super easily also by using soy or almond milk and substituting butter for vegan butter, serving with a  hummus 

Ingredients

1 head of cauliflower chopped into florets

1/2 cup milk (any unsweetened kind will do)

1/2 cup water

3/4 cup flour

2 tsp garlic powder

2 tsp onion powder

1 tsp of paprika

1/4 tsp sea salt

1/4 tsp ground pepper

Directions 

preheat your oven to 450 F.

Line baking sheets with parchment paper.

In a large bowl whisk together flour, water, milk, garlic powder, paprika, onion powder, salt and pepper.

Add cauliflower florets and mix until coated .

Spread evenly onto cookie sheets so cauliflower florets are not touching .

Bake for 15- 20 minutes and flipping once.

Remove from the oven and set aside.

2 tbsp butter

3 tbsp vinegar

1 tbsp water

Pinch salt

1/2 cup of your favorite hot sauce

Directions

In a large bowl whisk together melted butter, hot sauce, vinegar, water, and salt.

Add baked cauliflower and toss to coat (I use my hands for mixing it together).

Spread evenly onto cookie sheets and pop back in the oven for 20-30 minutes until crispy (flipping once).

Let sit for a few minutes before serving.
