So Tasty Eggplant Chips
I love chips …..I mean really love them ! My ass on the other hand really hates chips …. really hates them !
So along came these tasty little eggplant chip gems and happiness is now restored in my world, it doesn’t take much. Eggplant seem to be overlooked and not nearly used enough. We have all had eggplant that has tasted mushy or rubbery but I promise it should never taste like that.
These eggplant chips are a perfect movie night snack paired with a pesto dip you are in for a treat !
2 eggplants thinly sliced
1 tbs olive oil, coconut oil or avocado oil
1/2 tbs maple syrup or runny honey
1/2 tbs paprika
Preheat oven to 250F and set aside 4 large cookie sheets.
In a small bowl mix the oil maple syrup cayenne and paprika together
Place slices of eggplant on cookie sheets, brush with oil and maple syrup mixture on one side and flip over and repeat.
Pop in the oven for about 40 – 60 minutes depending on how crispy you like them, so keep an eye on them and find your perfect crispiness.
