The Worlds Best Glazed Lemon Loaf
Have you ever had Starbucks lemon loaf ? Well this my friends is better !!!
So I love lemons and I love Starbucks lemon loaf but for the life of me I couldn’t replicate it …. until I asked a friend who bakes like a machine and she gave me this little gem !
Lemon loaf is such a terrible name …. Lets call it Lemon cake in a loaf pan instead X
If you are new to zesting citrus here is a super quick how too zest
1 cup granulated sugar ( I use cane sugar)
1 cup Greek yogurt
1/2 cup vegetable oil
2 tablespoons lemon zest
1 to 2 tablespoons lemon extract (no substitutes )
1 1/2 cups all-purpose flour
2 teaspoons baking powder
pinch of salt
1 cup icing sugar
4 tablespoons lemon juice
Preheat oven to 350F.
grease and lightly flour a loaf pan (9×5)
Add the eggs, sugar, greek yogurt to a mixing bowl and whisk vigorously until smooth
Drizzle in the oil while whisking to combine.
Add the lemon extract & lemon zest while whisking to combine.
Add the flour,salt,baking powder and stir until just combined (don’t over mix some lumps are ok)
pour batter into your greased pan
Bake for about 60 minutes depending on your oven (the top will dome and crack down the middle ) place a toothpick into the middle and if it comes out clean your good to go !
cool in pan for 40 minutes before glazing (longer if you can hold on )
Add the icing sugar to a bowl and slowly drizzle in the lemon juice while whisking and tasting adding more or less lemon juice to suit your tastes
whisk until smooth
Drizzle glaze over Lemon Cake Loaf
*only use lemon extract
*you can replace yogurt with sour cream also
