Crazy Good Cranberry Sauce

Just in time for Thanksgiving!  I am currently having a panic attack due to the amount of cooking I have to get done.  So I am putting it off and writing this instead.  That should help, right?

Maybe, if I ignore the turkeys that are defrosting in my garage, they will rip through their plastic casing and fly away.  One can only hope.

As per usual, Thanksgiving eve is a complete cluster.  I have been attempting to make gravy and pies and sides while listening to my children scream and cry.  Apparently, one decided it was okay to sit on the others head.  So everything is right on schedule.  Lucky me.

Up next is my cranberry sauce.  The good thing about cranberry sauce is that I can throw everything in the pot and forget about it while I beat my children senseless and then put on a movie to hopefully keep them quite.

Just kidding, I don’t really beat them… but I definitely think about it.

Take a deep breath with me.  There isn’t much more to do.

Crazy Good Cranberry Sauce 

Ingredients:

  • 1 2lb bag of cranberries
  • 2 cups orange juice
  • 1 1/2 cups white sugar
  • 1 1/2 cups brown sugar

Directions:

  1. In a large pot, mix the sugar and orange juice over medium heat until all the sugar is dissolved
  2. Add cranberries
  3. Let cook until all the cranberries have popped open, about 20 minutes

Easiest thing you’ve ever done, right?  That’s what I aim for.  Now, keep calm and continue cooking.  Soon it will all be over and you will be onto doing all the dishes.  Not helping?  Sorry.

Try not to strangle your in-laws, or any of your relatives really.  Don’t discuss politics.  And play that dumb game where everyone goes around the table and says what they are thankful for (let’s be honest, grandma has been thinking about her answer for days and it is intended to shame and manipulate you).
