Super Simple Sweet Potato Toast

This super simple sweet potato toast is my new favourite breakfast, I have literally been eating it every morning for the past week.

Sweet potato toast is so simple and the fact that the toast is only made from one ingredient means you aren’t getting any hidden nasties or additives in the bread….. win win !

My toppings have been peanut butter with banana, strawberries and blueberries with a sprinkle of cinnamon and a drizzle of pure maple syrup. 

And you have yourself an amazing breakfast lunch or even dinner !

Ingredients 

2 slices of sweet potato (around 1cm in thickness)
 Tablespoon of peanut butter or another preferred nut butter
 Teaspoon of cinnamon
Teaspoon of pure maple syrup
1 banana
 Fresh strawberries and some blueberries

Directions 

Place the sweet potato slices in a toaster for 1-2 minutes until they are crispy and turning golden.
Grab them out of the toaster and let them cool down a bit.
Spread the nut butter over the sweet potato and top with the banana and berries and sprinkle with cinnamon and a drizzle of maple syrup.
Eat and enjoy!
