Sweet & Salty Caramel Oat Cookies

So So Yum ! Cacao Oat and Raisin Cookies

These cookies are absolutely delicious

Sweet & Salty Caramel Oat Cookies are just the thing to get your sugar levels leveled and allow you to get on with your day.

Paired these babies with a chai latte, tea or a good cup of coffee they are next level!!!!!

150g of oats
50g of raw almonds
1 tablespoon of tahini
2 teaspoons of maple syrup
1/4 cup of dates
200g of stewed apple
1/4 teaspoon of mixed spice (or a pinch of cinnamon, nutmeg and cloves)
pinch of salt


Preheat the oven to 150 fan bake and line a baking tray with baking paper.
Start by cooking the dates in a small pot with a bit of water on medium heat for 5 or so minutes.
Once the date are soft and most of the water has been absorbed place them into a food processor and combine into a think mixture.
Place the almond into a food processor and pulse until ground down.
In a large bowl mix the oats, ground almonds, salt and spices. Then add in the cooked dates, tahini, maple syrup and the stewed apple and mix to combine.
Roll the mixture into balls and flatten with a fork or your hand – cook in the preheated oven for 20 minutes and then leave to cool on a cooling tray.
Once cooled down – eat and enjoy! !!!!
