Arugula, Egg, Avocado Salad, With Mustard Seed Dressing
The Perfect Salad
Such an easy and tasty salad full of colours flavours and textures, perfect as a full meal or an appetiser. We had this last week as 3 different meals! when I find something I love I tend to go a bit overboard on it 😊
If you don’t have arugula you can replace it with any kind of lettuce and add some tuna or grilled chicken .
The mustard seed dressing is a perfect dressing to keep in the fridge on hand, just take it out about a half hour before using and get it to room temp.
2 cups arugula (rocket salad)
2 hard boiled eggs cut into quarters
1 large avocado sliced
1 small red onion sliced (optional)
1/2 cup olive oil.
3 tbs white wine vinegar.
1 tsp runny honey (sugar will work also).
1/2 tsp salt.
2 tsp whole grain mustard.
1 small garlic clove finely minced.
pinch of black pepper (to taste).
Mix the salt and vinegar together until dissolved.
Using a fork mix in the honey, olive oil, whole grain mustard, pepper and garlic.
Adjusting the flavours as you go.
Serve at room temperature.
Separate the ingredients onto each plate evenly.
Serve with dressing on the side.
