Beautiful Beef Kofta Spiced Meatballs
Organic grass fed beef makes these kofta spiced meatballs perfect, I served this with a great tzatzik ,warm pita bread and garlic infused olive oil.
Living in the middle East really gives you a new appreciation for food spices and the grilling of meats, the marinating process is a huge factor in infusing meat.
Its called planning ahead and yes i’m still struggling with this concept…. but its worth it I promise ❤️
4 cloves minced garlic
1 teaspoon salt
1 pound ground organic grass fed beef or lamb
1 grated onion
1/2 cup flat leaf parsley
1 tablespoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon cayenne pepper
pinch ground black pepper
In a mixing bowl Mash the garlic and salt together
add the beef along with the
cinnamon and pepper
mixing it all together.
Form the mixture into oval balls.
Place the meatball onto a baking sheet, cover, and refrigerate overnight
grill for 20-25 minutes or until done to your preference of rare medium or well done.
Garlic Cucumber Dressing
2 organic cucumber seeded & chopped
2 cups plain goat yogurt (regular if goat unavailable)
1 garlic bulb peeled
pinch salt and pepper
good squeeze of lemon
leaving one cup of yogurt aside
put everything in food processor and blend
put in bowl and add another cup of yogurt mix well
