 Every Sunday needs to be pancake Sunday 

I can not explain how much I actually love this recipe and how I just can not wait for Sundays so i can make this delicious recipe, its practically health food!!!!

We wake up reasonably early for the weekend and I whip up a batch of these pancakes for the family, I serve them with a pile of brown sugar and lemon (my favourite combination of flavours), topped with loads of fresh fruit.

After i stopped eating dairy and gluten I didn’t really make pancakes any more as they didn’t seem as exciting. I did try a few times experimenting with almond meal and coconut flour as a substitute, but every time i would regret it as they tasted terrible and gave me such bad tummy aches. So for me there were no more pancakes to be had, until i discovered i could eat oats and not get a sore stomach.

I have a recipe book called Eat Smart by Niomi Smart and she has a recipe called coconut and mango pancakes and the is where i got the idea to use oats instead of flour in the pancake batter. To my surprise it actually tasted amazing and was extremely delicious.

 For a special treat try using dark chocolate chips or a bar of dark chocolate chopped up into reasonably small pieces, because we can all use a little chocolate for breakfast now and then !

Vegan Pancakes With Friends

The perfect breakfast to make everyday good!!!!! And its VEGAN!!!!!

Prep Time: minutes Cooking Time: minutes Total Time: minutes

Yields: 5 pancakes

Recipe Ingredients

  • 1 1/2 cups oats
  • 1 teaspoon of apple cider vinegar
  • 1/4 cup of desiccated coconut
  • 1 1/4 cup of oat milk
  • 2 bananas
  • 1 tablespoon of coconut sugar
  • 2 tablespoons of sugar and dairy free chocolate chips - to serve
  • chopped banana or another fruit that you enjoy - to serve
  • blueberries - to serve

Recipe Instructions

  1. Place the oats into a blender and blend until ground down into a flour like consistency.
  2. Add in the banana, coconut sugar, oat milk, apple cider vinegar and the desiccated coconut and blend until all mixed together.
  3. Heat a bit of coconut oil in a non-stick pan and place in some of the mixture and fry for a few minutes on each side - repeat this with each one until all of the mixture has been used up.
  4. Serve with any of your favourite topping or take my example of the chocolate chips and fresh fruit as it tasted amazing!!
  5. Eat and enjoy!!!
