 Corn Avocado Goat Cheese Salad With Dill Lime Vinaigrette

I very rarely use frozen veggies but I found some organic frozen corn the other day and thought I would give it a shot, so happy I did ! Corn and goat cheese are definitely a winning combo.

Super easy recipe and a brilliant side dish or a full meal.

Ingredients Dill Lime Vinaigrette

teaspoon grated lime zest
1/2-teaspoon salt
1/4 cup fresh lime juice
1/2 cup extra-virgin olive oil
3 teaspoons dill fresh if available


Whisk the lime zest, salt , dill and lemon juice together

 Adding the oil in a stream until an emulsion forms

let sit for 5 min

Ingredients Corn Avocado Goat Cheese Salad

3 cups cooked corn  (fresh or frozen) * Always try and get organic corn.

1/2 cup crumbled goat cheese

1 large avocado cubed


Place all ingredients in large serving bowl and mix gently adding the dill lime vinaigrette
