Crazy Good Pea , Sweet Potato & Coconut Curry

This Crazy Good Pea , Sweet Potato & Coconut Curry is absolutely to die for !

I love indian cuisine (i pretty much love all cuisine to be honest) and since moving to spain I have been neglected in the indian restaurant department ….. seems it’s not a staple here !  thankfully cooking curries is super easy once you know the basics 😊 mind you there are a lot of really hard dishes that take time and patience, this however is the simple kind.

So as for the spices this is a simple guide that can be altered easily just taste as you go , you can also just use curry powder or paste instead of individual spices,.

I love the taste of cumin so I always add extra as i go , I serve my curries with side dishes of chopped fresh onion , greek yogurt and crumbled goat cheese.

  2. 2 large sweet potatoes peeled and chopped into bite size pieces
  3. 1 can coconut milk
