Crock Pot Rich Mushroom, Potato And Red Wine Soup

Rich Mushroom, Potato And Red Wine Soup

RECIPE

Ingredients 

2 cups sliced mushrooms

2 medium onions chopped

3 cloves garlic diced

3 cups veggie or chicken stock

1/2 cup red wine (more to taste)

1 pound potatoes, peeled and chopped

1 tbs butter or olive oil

Salt and freshly ground pepper

Dried parsley

6 sprigs of thyme (keep them whole)

Directions

In a skillet add onions mushrooms butter or olive oil on a medium/high heat and stir together adding red wine as you go, cook until onions are translucent and mushrooms are soft and dark about 6 min.

Add garlic and cook for 2 more min.

add everything to the crock pot and turn on low heat for 4-6 hours

Remove thyme sprigs and serve

* This soup can be made on the stove also

In a soup pot, add onions mushrooms butter or olive oil on a medium/high heat and stir together adding red wine as you go, cook until onions are translucent and mushrooms are soft and dark about 6 min.

Add garlic and cook for 2 more min.

Add all ingredients and  cook over moderate heat until the potatoes are tender. about 15 min.

Remove thyme sprigs and serve.
