Crock Pot Sweet Potato Coconut Soup
This is my absolute favorite soup !! it is super good for you and tastes like pure indulgence !
I am a huge fan of curries so I tend to use a bit more spice then others may, So if your new to these spices start with 1 teaspoon of each and add more the next time until you find your perfect measurements.
Now if you love heat like I do add the fresh chillies to the pot and let them cook all day but if only some of the family likes chili then serve it chopped as a garnish with the coriander x
1 tbsp coconut oil
1 -2 tsp raw chopped ginger
1-2 tsp cumin
1 -2 tsp turmeric
1-2 tsp gara masala
2 medium chopped onions
1 garlic bulb peeled and each piece cut in half
5 sweet potatoes, peeled and chopped
1-2 cups of chopped pumpkin
4 cups of veggie or chicken stock
good pinch of salt and pepper
chopped frech red chillies (optional)
1 can coconut milk or cream
chopped coriander leaves (optional)
1 cup of greek yogurt (optional)
Place sweet potatoes, ginger , chopped pumpkin, half of the chopped garlic and stock in the crock pot on low
in a skillet on medium heat place the coconut oil and add the onions and rest of garlic mixing together add the spices and cook until onions are becoming soft .
add to crock pot and stir
add fresh chilies
cook on low for approx. 6 hours
using a hand blender or food processor blitz until smooth
add the coconut milk or cream and cook for 30 more min
Serve with chopped coriander , chiles and a dollop of greek yogurt on top
