Feta & Basil Bruschetta
Absolutely perfect in every way ! This Feta & Basil Bruschetta is always a hit and absolutely bursting with crazy good flavours.
Served as and appetiser on baguette slices its the perfect way to welcome summer in.
The rules with bruschetta is there are no rules …. play around with it and add as you go …. try adding some capers !
The only thing I strongly suggest is to keep your tomatoes at room temperature , it makes a huge difference in the outcome X
I use a ton of garlic in my bruschetta for health benefits and also I’m a garlic freak …. (could be worse), so if I have company I make 2 batches, one with 2 cloves and mine with 6 cloves !
If you have tortilla chips then dice the bruschetta smaller and serve as a chunky feta, basil & garlic salsa ….. SO GOOD !
1 pound of grape or cherry tomatoes cut Ito quarters
1 handfull basil chopped
2-6 garlic cloves finely chopped
2 tbs extra virgin olive oil
1 tbs balsamic vinegar
pinch of salt
ground black pepper
mix all ingredients together in a bowl and serve over slices of lightly oven toasted baguette or bread of your choice.
