Goat Milk Marinated BBQ Chicken

Marinating meat in milk is common a practise around the world, when I lived in Jordan I couldn’t figure out how they never had tough meat it was always tender and amazing (even the cheaper cuts were great).

I finally found out the tricks of the Middle Eastern BBQ marinade …. MILK …. who knew !

I use goat milk as I love the flavour it adds but you can use cow or even yogurt.

Goat Milk Marinated BBQ Chicken

This marinade is used with all cuts of meat, the trick is to marinate for 24 hours for tender meat.

Try pairing this chicken with some Grilled Lemon Garlic Butter Zucchini  

Goat Milk Marinated BBQ Chicken

The Perfect Marinade For Tender And Juicy BBQ Chicken

Cook Time 55 minutes
Total Time 1 hour 15 minutes

Ingredients

  • 2 cups Plain goat milk
  • 2 1/2 tbs olive oil
  • 1 tbs honey
  • 1/2 tsp cinnamon
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp lemon zest
  • 2 tbs freshly squeezed lemon juice
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 6 cloves minced garlic
  • 1 large chicken cut into 4 pieces or pre-cut chicken pieces

Instructions

  1. Whisk all ingredients together (except chicken) until well combined.

  2. Place chicken and sauce in a bowl or a ziplock coating chicken thoroughly.

  3. Cover and leave in fridge for 24 hours

  4. Take out of fridge and let sit at room temperature for half hour before placing on grill

  5. Turn bbq on to medium heat and grease lightly

  6. Place chicken on bbq meat side down close lid or cover

  7. Cook for 40 min and flip cook for another 10 -20 min depending on your bbq
