Golden Ghee Turmeric & Cranberry Rice
Rice is my all-time fav go to food, its easy and it can be dressed up so many different ways. I absolutely love using ghee (clarified butter) in my cooking as the taste difference is so noticeable.
If you don’t like cranberries just leave them out or add some peas either way the dish will be perfect X
2 cups of rice
4 cups of water
1/4 cup ghee
1 tsp sea salt (more to taste)
1 tbs turmeric
1/2 tsp cumin
pinch of cinnamon (optional)
1/2 cup dried cranberries
Place all ingredients except cranberries in a sauce pan .
Cover sauce pan and place over high heat bringing it to a boil.
Once the rice is boiling give it a good stir, replace the lid and turn heat down to low.
Simmer for 15 min and turn heat off, add cranberries and cover tightly for another 5 min letting the steam plump the cranberries and finish the rice off.
Amazing served with a dollop of greek yogurt and some coriander.
*This can also be made in your rice cooker.
