Grandmas Perfect Blueberry Pancakes

Pancakes pancakes pancakes……. the perfect Sunday morning brunch with family ! 

I very rarely eat pancakes but when the craving hits this is my go to never fail perfect old school recipe, its simple and its reminiscent of grandmas cooking.

If fresh blueberries are not available then frozen work perfectly also, just take them out of freezer and let them defrost slightly before using them.

Grandmas Perfect Blueberry Pancake recipe is one of those recipes that will quickly become a family favourite.  

Ingredients 

1 1/2 cups flour

2 tbs sugar

2 tsp baking powder

1/2 tsp baking soda 

1/2 tsp salt 

1 1/2 cup milk

2 eggs

1 tsp vanilla 

2 tbs oil

1 tbs cinnamon (optional)

 1 cup blueberries

Grandmas Perfect Blueberry Pancakes

Directions 

In a large bowl mix dry ingredients together and make a well in the centre

Pour the milk in and mix as you pour

Add eggs, oil, vanilla and cinnamon whisking until well combined (will be slightly lumpy)

Heat a frying pan and pour in pancake mix (1/4 to 1/2 cup)

Add some blueberries to the pancake now 

When the pancake starts to bubble on top flip it over and cook until golden brown 

Repeat the cooking process with the remaining batter

Serve with some blueberries on top and maple syrup
