Lemon Spiced Wedges
Killed it with this recipe …. So So So Good !
I have always been in love with greek potatoes you know the kind every authentic greek restaurant has, lemony soft and slightly crispy.
Spiced roasted potatoes are always a hit but these lemon spiced wedges are a total game changer, make sure to use a good olive oil.
Well this is my half assed attempt at Greek wedges and I must say they are to die for, you can add more lemon while cooking for more flavour.
And as always with my recipes you can add more or less spices as you go, I always add more paprika and also slip in some cayenne pepper for a bit of a kick.
2 pounds potatoes (Yukon gold is best)
1/2 cup lemon juice (fresh is best)
1/3 cup olive oil
3 garlic cloves minced
celery salt (optional)
Preheat the oven at 200 degrees Celsius/390 Fahrenheit.
Cover the pan and bake for 1 hour
Uncover and cook for another 30 min
serve with lemon wedges and tzatziki
