I love the Mediterranean diet and living in Spain has made this my reality… learning to not use every condiment I could get my hands on was a tough one .

Mediterranean Roasted Artichokes

Artichokes have always seemed like a hard veggie to work with, so I usually just ordered them at a restaurant.

until my neighbour taught me to make them like this and now I’m eating them a couple times a week !

I think the hardest thing about artichokes is getting an appealing picture once cooked !

Mediterranean Roasted Artichokes

  • 4 large globe artichokes
  • 1 large lemon juiced into a bowl
  • 1-2 tsp sea salt
  • 3 tbs extra virgin olive oil
  • 8 cloves garlic peeled


  1. Pre heat oven to 400

  2. Trim artichokes and cut in half.

  3. Rub the cut side of artichoke in the squeezed lemon too prevent browning.

  4. Using a spoon or a pairing knife scoop out the hairs in the centre.

  5. Place each halve on a piece of tinfoil (cut side up) pour some olive oil over it sprinkle sea salt and place a clove of garlic in the middle .

  6. Wrap up in the tinfoil and place in oven stem side down for 40 min.

  7. Remove from foil and serve .
