Yep this is a winner on every level ! vegetarian , easily vegan (no cheese) and really crazy tasty .

I love quinoa,  but never seem to make it enough yet every time I do I wonder why I haven’t made it more !

when I first started making it I wasn’t rinsing it and that makes it slightly bitter , even when it says no rinse I rinse.

My steps for perfect fluffy and tasty quinoa

  1. Using a fine mesh strainer rinse and rub 1 cup quinoa with your fingers for a few minutes to get the outer coating off.
  2.        Bring 1.25 cups of veggie broth or water to a boil and add quinoa , cover and reduce heat to a simmer for 12 – 15 min.
  3.        Remove from heat and fluff with a fork

Now that is all for your quinoa lets just pretty it up !

A Perfect Salad Filled With Flavours And Nutrients

Servings 3 people

Ingredients

  • 3 cups cooked quinoa 1 cup uncooked = 3 cups cooked
  • 1 bunch asparagus trimmed and cut into pieces
  • 10 cherry tomatoes
  • 1/4 cup crumbled goat cheese
  • 1 tbs olive oil
  • 1 cup arugula

Dressing

  • 1 1/2 tbs dijon mustard
  • 2 tbs maple syrup
  • 3 tbs extra virgin olive oil
  • 1 pinch salt
  • 4 tbs balsamic vinegar

Instructions

  1. In a skillet add one tbs of olive oil, a pinch of salt and asparagus pieces mixing together, cook for approx 10 min on medium high and squeezing fresh lemon as you go.

  2. In a large bowl toss all ingredients together 

For the dressing

  1. In a small bowl whisk together all ingredients and drizzle over salad.
