Roasted Broccolini, Feta & Bird Seed Salad
Ridiculously tasty and so easy ! warm veggie salads are a perfect lunch or dinner, filled with nutrients and super filling X
I whipped this up in 10 min ate it in 2…. and it was insanely good…. i just need to slow down !
Broccolini is such a great veggie and so rarely used, definitely one of my favs . If you can’t get a hold of any totally substitute it with broccoli, just cut the florets down the middle.
As for the bird seed mixture I used cranberry’s, raw almonds , pumpkin and sunflower seeds, so basically use what you have in the cupboard and get your salad on.
This is vegan friendly if you take out the feta and it still tastes amazing, so if you have vegan company or are not sure serve the feta on the side.

Roasted Broccolini & Bird Seed Salad
A Beautiful Warm Veggie Salad
- 1 pound broccolini washed and trimmed
- 1/2 cup mixed seeds and cranberries
- 2 tbs olive oil
- 1/2 tsp sesame oil
- 1 tsp sea salt
- 1 squeezed lemon
- 1/3 cup crumbled feta
turn oven to broil
Place broccolini on a cooking sheet adding 1 tbs of olive oil and mixing it until covered (use hands). pop in oven for about 6 min
In a frying pan on medium high heat add sesame oil, olive oil, seeds, cranberries and salt and cook for about 3-5 min squeezing half of the lemon on as its cooking .
once broccolini is slightly charred on the ends place on your plates and top with the seeds and cranberries finishing of with some crumbled feta and squeezed lemon
