YUM….. this soup is absolutely divine ! its rich and filled with goodness. Fight the winter bugs with this immune boosting garlic and onion soup.

I served this chunky as is but you can also blend it with a immersion blender for a smooth result, both ways are a beautiful way to enjoy this soup.

Roasted Garlic And Caramlized Onion Soup

Ingredients 

6 onions diced and sliced

3 garlic bulbs

1/2 bottle white wine

2 tbs olive oil

tsp salt (more to taste)

1 tsp cane sugar

4 cups beef broth (Bone broth is best)

1 tbs cider vinegar

Directions

preheat oven to 350

Cut the tops of garlic bulbs (just enough to expose the cloves), place bulbs on tinfoil, drizzle 1 tbs of olive oil on builds and wrap the tinfoil tightly around bulbs and place in oven for 1 hour.

While garlic is roasting , place a skillet with a tbs of olive oil on medium heat and the diced onions cook for 30 min add in splashes of wine when onions start dry out, keep cooking until onions are nice and brown add the sugar and cook for 5 more min.

In a large sauce pan on low heat add your broth, onions and squeeze the garlic out of the cloves into the soup.

Simmer for 1 hour adding a tbs of cider vinegar.
