Slow Cooked Mashed Garlic Lemon Potatoes
OMG these garlic lemon potatoes are unbelievably tasty and so incredibly easy to make! The potatoes don’t have to be mashed, you can serve them as is hot and full of flavors.
3 pounds baby potatoes, halved
2 tablespoons olive oil
1 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon dried dill
1 teaspoon smoked paprika
Salt and pepper, to taste
1/2 cup of chicken or vegetable broth
juice and zest of 1 lemon
2 tablespoons chopped fresh parsley leaves
1/3 cup sour cream or greek yogurt
1/2 cup–1 cup whole milk
Place potatoes, broth, oil, butter,garlic, lemon juice, dill, paprika, salt and pepper in the slow cooker and season with salt and pepper.
Cover and cook on low heat for 5 hours or until tender.
If Mashing ….
Get your masher out and start smashing adding the milk and sour cream or greek yogurt.
Finnish of with grated parmesan and a squeeze of lemon.
