Get that slow cooker ready the recipes are coming fast and furious around here ! The one thing I love about this soup is the rich flavour you get when you brown the mushrooms and onions in butter first. 

There is no need for cream in this rich soup, although you can blend with a hand blender for a beautiful rich and creamy texture.

*Blending mushroom soup for kids is a great way to get kids to enjoy mushrooms as its usually the texture thats the problem not the flavour. 

Slow Cooker, Rich Mushroom Soup

Ingredients

1 pound of mushrooms roughly chopped *use different types mixed together if possible.

2 medium onion chopped finely

2 cloves minced garlic

1 quart beef stock or vegetable

2 tbs butter

1/2 tsp Worcester sauce

1 tsp salt more to taste
1/2 tsp ground black pepper
1 sprig rosemary

Directions

Put your stock in the crock pot and turn to low heat adding half of your mushrooms and 1 chopped onion.

Heat the butter (or olive oil) in a skillet on medium high heat adding mushrooms and the other onion. Cooking until nice and brown almost caramelised. Add the garlic,Worcester sauce, salt and pepper cooking for 1 more minute.

Add Sautéed mushrooms, onions and rosemary to the crock pot and cook on low for 4 -6 hours
