Sweet Potato And Mushroom Pie
This is the perfect meatless Monday meal, sweet potato and mushroom pie is super easy and incredibly tasty, I whipped this up on a whim and was really happy with it.
The mushrooms in this are cooked with red wine which gives this meal a rich and beautiful flavor, even my mushroom hater son loved this
Sweet potatoes are definitely one of the healthiest and tastiest veggies around they are high in vitamin c and b6 and produces collagen for youthful skin …… you had me at youthful skin!
4 peeled, chopped sweet potatoes
3 shallots diced
2 garlic cloves diced
3 cups sliced mushrooms
1 cup pea slightly cooked peas
1/4 cup red wine
2 – 3 tbs olive oil
1/2 cup grated cheese
2 tbs butter
2 tsp ground pepper
Directions Boil sweet potatoes until tender.
While potatoes are boiling, Add olive oil and mushrooms, onions and a pinch of salt to a skillet on medium high heat.
Cooking and adding red wine as you go until mushrooms or nice and brown and red wine is absorbed , add garlic in the last few minutes and remove from heat.
Mash sweet potatoes with butter, pepper and salt until smooth.
Mix peas in gently with the sweet potatoes .
In a casserole dish spread mushrooms and onions on the bottom sprinkling a bit of cheese over mushrooms.
Add the sweet potato mixture on top and bake for 30 mins at 325 or until the topping is becoming golden, sprinkle the rest of the cheese on top until melted and slightly crispy.
