4 medium zucchinis
4 scallions, finely chopped
9 oz soft goat cheese
1 cup flour
salt and pepper, to taste
2 eggs, beaten
1 tsp lemon rind
Mix All Ingredients Together
Shred the zucchini and get rid of access water
Put the chopped scallions in a bowl and crumble in the goat cheese.
Add flour and season well with salt and pepper.
Add the beaten egg and mix well before stirring in the drained shredded zucchini and lemon rind.
(Don’t Stress If It’s Lumpy, It’s Supposed To be)
Heat some oil in a skillet and drop a large tablespoon of the batter into the hot oil
and flatten them gently with the back of the spoon.
Cook the patties for about 2 minutes each side, or until golden brown. Transfer to plates.
Serve them with a squeeze of fresh lemon juice.
